It’s the Spain dear to our heart, the Spain of our flavours and our friends. Here, everything is from Spain, from the tables designed by chef Alberto Herráiz to the menu, illustrated by Miguel Barceló, the ‘jamon iberico’ Iberian cured ham turning in its lit cabinet, the rice, the paprika, the wine and the manzanilla sherry.
This is Spain as cooked and presented by Alberto and Vanina Herráiz, a modern, vibrant, flavoursome Spain.
A modern ‘arroceria’
Fogón means stove in Spanish, and by extension, bistrot or restaurant. However, our Fogón is above all an arroceria: a restaurant specialized in rice dishes using Spanish rice.
Rice cooked in a paella, of course, but as far removed as possible from the version served up to tourists. At the Fogón, we offer you the very best in rice, using only fresh products, Bomba rice, and cooking to order. This all goes to ensure we can offer you as close to perfection as possible in terms of texture, taste and seasoning.
Seven varieties of rice to choose from
As well as the classic varieties of traditional paella: Valencian-style rice and rice in black cuttlefish ink, we offer a whole range of less well-known recipes, together with the creations of Alberto Herráiz: rice with vegetables, rice in fish stock, rice with scampi, rice with jamon ibérico (Iberian cured ham)…
The menu always features six paella-cooked rice dishes, as well as a rice dish of the day, prepared according to what’s available on the marketplace.
You may taste them à la carte, or with the « rice selection » which starts off with a few tapas, followed by your choice of rice and a dessert from the menu. The rice is prepared for at least two people.
The Fogón’s tapas
At the Fogón, the tapas have moved from bar top to table top, but the spirit of tapas remains unchanged: informal, sociable, inquisitive and above all, epicurean. They are produced in an inimitable style that brings out the very best in Spanish products thanks to modern techniques of preparation.
We invite you to discover this range with the « tapas selection », which changes every month and includes mouthful-sized savoury bites, gazpacho, pinchos, banderillas (savoury appetizers on cocktail sticks) light dishes and sweet tapas.
The tapas selection is served for the entire table, in the same way as a gourmet tasting selection.

The venue
Here there’s neither movida, nor castanets… Our very own Spain is to be found on your plate and in the atmosphere. There’s just one clue present in the room: the presence of the ‘templador de jamón’, a temperature-controlled glass cabinet for Iberian ham. This is a one-off example, created by chef Alberto Herráiz.
